We revisit scientific issues again and again, but always from new and enhanced perspectives. Now that the low-carb craze is over, we can look at carbohydrates from a new perspective—that of “glycemic index.” We may get a new appreciation of how the digestibility rates of starches and sugars affect health in general. At present, this is not clear, as the various feature articles in this issue indicate.
