Environmental Monitoring in the Milling and Baking Industry

Abstract

The milling industry has been slow to accept many of the processes that are emerging throughout the food manufacturing industry; however, the development of food safety programs within the food industry has taken hold rapidly. Increased regulations accompanied by an increase in product recalls have led to the development of new and improved hygiene programs. Along with advances in these programs, there has been a concomitant development of environmental monitoring programs. The goals of these programs are twofold: first, to identify any allergens or pathogens that may threaten the final product; and second, to identify routes that contaminants may take to affect the final product. Taking a proactive approach to monitoring the production environment helps to ensure production of a safe product, and it can be a great tool for identifying potentially compromised areas before they become major issues.
